For years at Bodegas Vicente Gandia we have used Bobal to produce world-class modern wines. The results have not always been brilliant. We had to clean up entire preparations because they didn't reach the standard we were looking for. But we soon learned that by green pruning to reduce the quantity per vine, harvesting the older vines and choosing the best bunches, it would be possible to obtain excellence. The trick was to skim only the best.
